Ingredients
For the Coleslaw:
- ½ head white cabbage
- 1 red onion
- 2 carrot
- 2 tbsp crème fraîche
- 4 tbsp mayonnaise
- 3 tsp salt
- 1 tsp black pepper
- 2.5 tsp sugar
- 3 tbsp vinegar
For the Chicken:
- 2 chicken leg
- 2 tbsp soy sauce
- 3 tbsp sriracha
- 1 tbsp grated ginger
- 6 tbsp starch
- For the Hot Oil:
- 1 tsp smoked paprika
- 1.5 tsp cayenne pepper
- 1 tsp garlic powder
- ½ tsp MSG optional
- 1 tsp brown sugar
- 1.5 liter vegetable oil
For Assembly:
- 1 brioche burger bun
- 1 tbsp butter
Instructions
- Prepare the coleslaw by shredding the cabbage, grating the carrot, and finely slicing the onion. Mix with mayonnaise, crème fraîche, vinegar, salt, pepper, and sugar. Set aside.
- Marinate the chicken by mixing soy sauce, sriracha, ginger, and salt in a bowl. Coat the chicken and let it sit.
- Bread the chicken by dredging the marinated chicken in starch, ensuring an even coat.
- Fry the chicken by heating oil in a deep pan to 180°C (350°F). Fry the chicken until golden brown and crispy. Let it drain on a wire rack.
- Make the hot oil by mixing paprika, cayenne, garlic powder, brown sugar, and MSG. Pour hot oil over the spices and stir. Toss the fried chicken in this spicy oil.
- Toast the buns by melting butter in a pan and toasting the brioche buns until golden.
- Assemble the burger by spreading coleslaw on the bottom bun, adding the hot fried chicken, and topping with the other half of the bun.
